Apple Pecan Brussels Sprout Salad
Crunchy, tangy, sweet, nutty.
This delicious salad can be served as a side dish at a family meal or stored in the fridge for a couple days as something healthy to nibble on. Brussels Sprouts contain vitamin K which is great for bone health. Nutritional yeast adds extra flavor and is loaded with vitamin B for energy. Avocado oil and pecans bring heart healthy fat.
Ingredients:
3 cups chopped Brussels Sprouts
1 chopped Apple
1/2 cup chopped Pecans
1/4 cup Avocado Oil
1 tbsp Dijon Mustard
Salt/Pepper to taste
14 cup Apple Cider Vinegar
1 tbsp Nutritional Yeast
Directions:
Combine avocado oil, apple cider vinegar, salt/pepper, dijon mustard, and nutritional yeast in a small bowl to make the dressing. Toss remaining ingredients with dressing in a bowl. The salad can be stored in the fridge for 2-3 days after making. Its even better the second day as the dressing starts to soften the brussels sprouts.
