Mediterranean Bowl

This Mediterranean bowl is one of my go-to delicious meals that is jam packed with nutrition and flavor and is super quick & easy to prepare.
Ingredients:
cauliflower rice
kalamata olives
hummus
cucumber
chicken
Directions:
Cook the cauliflower rice in a pan with medium heat stirring often. I usually don’t use any oil because the moisture in the cauliflower and frequent stirring prevent it from sticking. You can use pre-riced frozen cauliflower or grate your own fresh cauliflower. Season with salt and pepper and cook until it begins to slightly brown. This will give it a slightly nutty flavor.
While the cauliflower cooks, slice precooked chicken into strips. (I like to bake a big batch of chicken breasts on Sunday evenings to have ready for the upcoming week’s lunches/dinners. Season how you like. I like to use Bari Girl spice blends because their spices contain ingredients that have benefits for your body. Slice your cucumber into small cubes. Halve and pit the kalamata olives.
Top a generous portion of cauliflower rice with sliced chicken, cubed cucumber, kalamata olives, and a scoop of hummus.
