Cranberry Kale Quinoa Salad

This flavorful salad is a rockstar in the nutrition department. It’s rich in antioxidants, healthy fat, fiber, vitamins & minerals, and protein.
Ingredients:
2 bunches fresh kale
1 minced shallot
2 tbsp golden flaxseeds
1/4 cup dried cranberries
1/4 cup grated parmesan cheese
2 minced garlic gloves
Salt/Pepper to taste
1 cup cooled cooked quinoa
juice of 2 lemons
4 tbsp extra-virgin olive oil
Directions:
Combine minced shallot, garlic, olive oil, lemon juice and salt/pepper in a small bowl to make the dressing. Massage the washed kale with the dressing to soften and reduce bitterness. Add remaining ingredients and toss to combine. The salad will keep well covered in the fridge for a couple days and makes a delicious snack or meal.
