Cauliflower Rice Tabouli
A mix of vegetables, flavorful herbs, and healthy fat.
This dish will keep for several days refrigerated and provides lots of nutrition and taste. It’s even better when you can grow the veggies and herbs at home.
Ingredients:
1 bag cauliflower rice
2-3 tomatoes
1-2 cucumbers
2-3 stalks celery
fresh parsley
fresh mint
2 gloves garlic
fresh chives
2 lemons
1/3 cup avocado oil
Directions:
Cook the cauliflower rice in a pan with medium heat stirring often. I usually don’t use any oil because the moisture in the cauliflower and frequent stirring prevent it from sticking. You can use pre-riced frozen cauliflower or grate your own fresh cauliflower. Season with salt and pepper and cook until it begins to slightly brown. This will give it a slightly nutty flavor. Chill the cauliflower rice before mixing with other ingredients.
While the cauliflower cooks, dice the cucumbers, celery, and tomatoes. Coarsely chop the parsley, chives, and mint. Finely mince garlic (or use a garlic press-which I highly recommend!) Zest the lemons before juicing. Combine avocado oil, lemon juice, lemon zest, garlic, and salt and pepper in a small bowl to prepare dressing. Gently fold all ingredients and dress in a large bowl.
